We went on a hunt for an Asian Salad that could be used with a Personal Trainer Food favorite, Prime Rib Fajita Strips. We found one that will not disappoint! It’s a quick meal that will add a little kick to your lunch or dinner!
Ingredients:
Dressing:
2 tbsp olive oil
2 tbsp low sodium soy sauce
1 tbsp lime juice
2 tsp fresh ginger (minced)
2 cloves of garlic (minced)
Steak:
1 pkg Prime Rib Fajita Strips (thawed)
Low sodium soy sauce and olive oil (liberal amounts for sautéing)
½ red onion (sliced)
Salad:
6-8 cups baby spinach
1 Pint grape/cherry tomatoes (halved)
Chopped green onion (to taste)
Directions:
Dressing:
Whisk together the olive oil and soy sauce.
Add lime juice.
Finish by adding the minced ginger and garlic.
Stir well.
Prime Rib Fajita Strips:
Pour some olive oil and soy sauce into a skillet and sauté the onions.
When the onions are almost cooked to your liking, add the Prime Rib Fajita Strips.
Once complete, set aside while you combine the salad.
Salad:
Combine the spinach, tomatoes, dressing and toss.
Add the steak and onions on top and finish with green onions.
Apply dressing to taste.
